Beach Day Bites: Cheeseburger Simplicity at Kooky Coconut

Writer: Dianna NicolasDianna Nicolas

There’s just something about pairing a burger with the beach that feels right. On this particular Burger Tuesday, I found myself soaking up the Florida sun at Indian Rocks Beach—one of those sleepy little stretches of coastline that promises peace, quiet, and a solid dose of salt air.

But after a few hours of lounging, the inevitable happened: hunger struck. And when you’re living the Burger Diva life, you already know what comes next.

I made my way over to Kooky Coconut, a colorful little spot just steps from the sand. It’s got that old-school beach shack energy—simple, unfussy, and exactly what you’d want for a grab-and-go bite. I ordered a classic cheeseburger with a side of chips, and to my surprise, they threw in Cheetos too (extra crunch never hurt anyone).

Let’s talk about the burger:

A 5oz frozen-style patty, grilled up and topped with cheddar cheese, lettuce, tomato, pickles, ketchup, mustard, and mayo. No gourmet flair, no fancy aioli, no brioche bun—just your basic burger done right. Honestly, it hit the spot. The kind of satisfying simplicity that only makes sense when you’re salty from the ocean and slightly sun-drunk.

Was it the best burger I’ve ever had? No.

Was it exactly what I needed at that moment? Absolutely.

Now for the beach itself… Indian Rocks is quiet. Like, almost too quiet. I love a chill vibe, but I also enjoy a little background noise—a good playlist, the buzz of people chatting, waves crashing. Instead, I got renovation noise. Apparently, there’s been ongoing construction near the beach for the past two years (yes, two years), and the drilling and hammering kind of ruined the ambiance. Not the best trade-off for tranquility.

Still, beach + burger = a combo that rarely disappoints.

Would I go back? For the burger, sure. For the beach? Maybe once the hammers are put away.

Your turn:

What’s your go-to meal for a beach day? Do you keep it simple or go full picnic mode? Drop your favorites—I’m always looking for new combos to try on the sand.
